- Tortilla Chips
- 1 sm. onion, chopped
- 2 cloves garlic, minced
- 1 lb. ground meat (choose whatever blows your dress up)
- 1 can black beans (drain, undrained - whatever)
- 1 cup shredded cheese
- 1 tbs ground cumin
- 1 - 10 oz. can enchilada sauce
- 1 cup frozen corn
- 1 tsp salt
- 1 tsp pepper
- Add the onion and garlic and sautee until soft. Add meat and ground cumin. Cook, breaking up meat with a spatula until browned thoroughly. Drain
- Add beans, enchilada sauce and corn. Mix well and continue to cook until sauce thickens (about 15 minutes simmering on low).
- Sprinkle shredded cheese on top of mixture and let sit until it melts.
- Grab a handful of chips, spread on plate, top with mixture (as much as your heart desires) and go to town!!!!!
*adding extra toppings is optional but will only make the flavors more amazing ~ jalapenos, sour cream, cilantro, guacamole, etc*
