Banana ~ Pumpkin Muffins
What to use -
- 2 cups whole wheat flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 cup white sugar
- 3 very ripe bananas, mashed
- 1 cup mayonnaise
- 1 cup canned pumpkin
- 1/2 tbsp cinnamon
- 1/2 cup walnuts (optional)
What to do -
- Preheat oven to 375 degrees
- Grease muffin pan or line with cupcake liners
- Stir the flour, baking soda, baking powder, cinnamon & sugar together in a bowl.
- Add the bananas, mayonnaise, pumpkin and walnuts; stir until mixed together.
- Pour batter into muffin cups ~ 3/4 full.
- Bake in preheated oven until golden and the tops spring back when lightly pressed, about 15 to 18 minutes.
