Banana ~ Pumpkin Muffins

What to use -
  • 2 cups whole wheat flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 cup white sugar
  • 3 very ripe bananas, mashed
  • 1 cup mayonnaise
  • 1 cup canned pumpkin
  • 1/2 tbsp cinnamon
  • 1/2 cup walnuts (optional)
What to do -
  • Preheat oven to 375 degrees
  • Grease muffin pan or line with cupcake liners
  • Stir the flour, baking soda, baking powder, cinnamon & sugar together in a bowl.
  • Add the bananas, mayonnaise, pumpkin and walnuts; stir until mixed together.
  • Pour batter into muffin cups ~ 3/4 full.
  • Bake in preheated oven until golden and the tops spring back when lightly pressed, about 15 to 18 minutes.
